    After the harvest time...

    ... came the winnowing when, with the wind's contribution, the light straw is separated from the seeds.

    Then they used to sift the seeds, which means that they sieved the seeds using a special big sieve, which was called drimoni. This way they used to remove the dirt and the chaff, the ear tubers that hadn't been removed by the wind during the winnowing.

    In the end, the seeds were left to dry under the sun and they were stored in boxes or in large weft- knitted bags that were called mataratsias.
